Cookies and lemon thyme. Recipe with country flavor

I think I have said several times: I love sweets with lemon. In general, citrus bring a delicious flavor and texture to cookies, cakes and pastries, but the lemon always has a special place in my recipe. So when I saw this recipe Cherry blossom I put it away quickly, and after adapting it a little at home we have enjoyed these delicious cookies and lemon thyme.

That is another virtue citrus, which combines beautifully with many other spices and aromatic. Thyme reminds me of my childhood in the countryside, where the lemon trees abound, and whenever I can I will add it to recipes like this that brings a fresh scent country to a soft pasta texture. They are perfect to accompany tea or coffee mid-afternoon.

Ingredients for about 30 cookies

115g unsalted butter at room temperature 1 lemon quality, 80g caster sugar (fine-grained, not glasé normal use if you do not have), 3 / 4-1 teaspoon dried thyme, 60 g of honey soft, 1 teaspoon vanilla sugar, 225 g pastry flour, 1/4 teaspoon fine salt, 1 teaspoon baking soda, powdered sugar to decorate.

Making cookies lemon and thyme

Chop the softened butter and place in a bowl. Beat with wire whisk until it is creamy. Besides sugar rub with lemon zest, without reaching the white part, to release the citrus aromas. Add the thyme and rub more.

Add sugar to butter and beat with mixer until fluffy texture. Pour honey and lemon juice strained through a sieve and whisk a little more. Add the flour, baking soda, salt and vanilla sugar and beat on low speed a little. Finish mixing with a spatula, wrap in plastic wrap and leave in refrigerator at least 30 minutes.

Preheat oven to 180 °C and prepare a couple of trays with parchment paper or a silicone sheet. Take small portions of dough with a spoon and rounded shape with your hands. Distribute trays leaving a couple of centimeters of separation between them.

Bake one tray at a time, for about 8-10 minutes, until browned to taste. Wait a little out of the oven to solidify, as they are very soft freshly baked, and let cool completely on a rack. I put more icing sugar when cool again.

As I mentioned at the beginning, these cookies and lemon thyme seem perfect to take home a nice box and remove them with coffee or tea. If we sure appreciate guests sweet detail. We might give them a slight glaze prepared with powdered sugar mixed with a little lemon juice, or leave them as is.
